Preheat oven to 350
In a large bowl
3/4 cup sugar
2 eggs
Beat until thick
1/4 cup oil
1 tbs OJ
add and mix for 2 min
2 tsp orange zest
1/2 tsp vanilla
2 cup flour
1/2 cup chopped walnuts 1 cup chopped pecan
1 tsp baking powder
1/4 tsp salt
1 cup dried cranberries
add to bowl and mix
Shape the dough sorta flat and long. Place on a non stick cookie pan or use parchment paper. Bake for 25-30 min at 350. Let Biscotti cool then Brush the Glaze over the top and cut into 1 in slices.
Glaze
1Egg white
1 tbs water
2 tsp powder sugar
Place slices back into the oven at 300 for 10 min. They will be a light golden brown when down.
These should be a bit crunchy. The best hard cookie to east with hot chocolate or tea.
