Pico De Gallo Salsa

Serves 4-6
3 large ripe tomatoes
1/2 red onion, finely chopped
1 large fresh green chilli, such as jalapeno, seeded and finely chopped
2 tbs chopped fresh cilantro
juice of 1 lime, or to taste
salt and pepper

1. Halve the tomatoes, scoop out and discard the seeds, and dice the flesh. Place the flesh in a large non-metallic bowl
2. Add the onion, chilli, chopped cilantro, and lime juice. Season to taste with salt and pepper and stir gently to combine.
3. Cover and let chill in the refrigerator for at least 30 min. to allow the flavors to develop before serving.
